North Texas Firkin Fest. A Firkin Fest finally hits Texas. It was really only a matter of time. Every beer fest typically has a special firkin from local brewers anyway. What is a firkin you ask? What makes it so special. Well if you have to ask this saddens me a little, but here we go. A Firkin is typically a one off or an experimentation beer whey they stuff crazy or maybe expensive ingredients into the beer to see what flavors happen. It’s a good way to experiment and get different takes on your favorite beers. It’s not crazy like in the movie Perfume where he stuffs dead cats and shit in a vat to capture their scents but sort of. Only no dead cats. More like fruit or coco nibs or vanilla. For instance Peticolas takes their great beer Wintervention and they stick all kinds of berries in it. For example Cherry Wintervention, Raspberry Wintervention etc etc.


So April 25th you can check out a Firkin or two from you local brewers. The brewers that will be there include Peticolas, Community, Cedar Creek, Collective, Deep Ellum, Grapevine Lake Wood, Martin House Rabbit Hole, Rahr and several others. Also Chimera formally Zio Carlo’s will be there. I don’t think I have seen them at a brew fest yet. So good to see they are stepping it up.

Brewed with Brettanomyces bruxelensis var. Drei. and lacto delbruckeii. Dry hopped in the firkin with Citra and Brett lambicus. It’s petite.

Funkytown Series – American Sour Red
American Sour Red
6.6% ABV | 16 IBUs
Brewed with Brettanomyces bruxelensis var. Drei. and lacto brevis. It has a Flanders Red malt bill and was aged in Icaria Winery cabernet barrels. Brett lambicus was added to the firkin.

What we have here is a cask of our Oatmeal Pale Ale. We dry hopped it with El Dorado and Simcoe. We wrote a Haiku in it’s honor.

Neo-American Brown Ale with Coffee

This is a cask iteration of our Oak Cliff Coffee Ale. This one is “Venti” if you will. We added another generous dose of coffee and some rum infused cinnamon sticks, the rum courtesy of Witherspoon Distillery in Lewisville, Texas. Yeah…it’s pretty epic.

We use several varieties of bold American hops balanced with Munich malt. After brewing, we dry hop the beer for intense fresh hop aroma, then infuse with guava and ancho for this special firkin.

This Divine Reserve was inspired by the winning entry of the 2007 Big Batch Brew Bash homebrew competition, brewed by Mike Heniff, a highly decorated local Houston homebrewer. Russian Imperial Stouts are very big and very black and this one is no exception.

Belgian Strong Golden Ale
10% ABV | 30 IBUs
The beer pours a bright golden color. The nose is a mixture of phenolics from the Belgian wit yeast and light citrus from the American hops with a touch of graininess. Rye adds sweetness and complexity to the pilsner and aromatic malts. The spice of the rye is somewhat subdued at lower temperatures but becomes more apparent as the beer warms.
